Yes, it's this time of year again (though I now have requests for this pretty much all year round!) and I need to make some Homemade Almond Roca. This is pretty much always a hit and I take it pretty much everywhere during the holidays.
1 cup of butter (margarine is not the same!)
3/4 cup of brown sugar
1 package of (whole) graham wafers
1 cup of slivered almonds
1 cup of chocolate chips
Preheat oven to 375 degrees.
Lay graham wafers on a cookie sheet - do not overlap.
Sprinkle almonds on top of the graham wafers.
In a saucepan, melt the butter.
Add the brown sugar and bring this to a boil.
Once it boils, pour it over the graham wafers and almonds.
Put it in the oven for 6-8minutes until just brown.
Take it out of the oven and sprinkle the chocolate chips on top.
Leave for a minute and run a fork through them.
Refrigerate and break into pieces when cold.
Enjoy it because it won't last long!

Hee, hee, we're on the same wavelength! I got ingredients for my first three batches this morning and will make the rest next week. It's always a hit - and a great idea for teacher's gifts (all our kids' teachers have been chocoholics so far!). We don't get Graham crackers here, so if there are any other Aussies reading this, use Arnott's Milk Coffee biscuits instead.
